Ground turkey, freshly made pesto and parmesan are the star flavors in these meatballs. Delicious eaten as they are, or try tossing through hot pasta or serving in meatball subs.
2Place the pine nuts for the pesto and the meatballs into the roasting pan. Once preheated, place them in the oven and start the timer.
3Remove them from the oven and cool to room temperature.
4Place the basil, garlic, Parmesan and ½ cup of the pine nuts in a blender.
5With the motor on, slowly add the oil and blend until smooth. Remove the pesto from the jug and set aside.
6Place the ground turkey into a bowl with the eggs, shallots, breadcrumbs, the remaining ½ cup pine nuts, Parmesan, salt and 1/3 cup of the pesto and use your hands to mix until well combined.
7The oven will preheat.
8Lightly spray the roasting pan with cooking spray. Roll ¼ cup measures of the mixture into balls and place them in the pan.
9Once preheated, place the meatballs in the oven and start the timer.
10Remove the meatballs from the oven and spoon over the remaining pesto.
11The oven temperature will adjust.
12Once the oven is at temperature, place the meatballs back in the oven and start the timer. Cook until internal temperature reaches 165°F.
