Measurements:

  • soy sauce icon
    ⅓ cup (2⅔ fl oz) soy sauce
  • mirin icon
    2 tbsp mirin
  • honey icon
    3 tbsp (2½ oz) honey
  • rice wine vinegar icon
    1 tbsp rice wine vinegar
  • finely grated ginger icon
    1 tbsp finely grated ginger
  • clove garlic icon
    2 clove garlic

    minced

  • sesame oil icon
    1 tsp sesame oil
  • boneless chicken thigh icon
    2½ lb boneless chicken thigh

    skin on

  • sesame seeds icon
    1 tsp sesame seeds
  • green onion icon
    2 green onion

    thinly sliced

Instructions

  • 1Place soy sauce, mirin, honey, rice wine vinegar, ginger, garlic and sesame oil in a bowl and whisk together to combine.
  • 2Add the chicken and turn to coat.
  • 3Insert the wire rack into position 4.
  • 4Place the chicken, skin side up, in the roasting pan and pour over the liquid from the bowl. Sprinkle with sesame seeds.
  • 5Once preheated, place the chicken in the oven and start the timer. When the Rotate Remind signals, rotate the pan and continue cooking until chicken is browned.
  • 6Remove the chicken from the pan and place it on a cutting board. Cut each thigh into three pieces on the diagonal. Reserve the pan juices, to serve.
  • 7Drizzle with the pan juices and sprinkle over the green onions. Serve with steamed rice.
