For the wedges

  • sweet potato icon
    1½ lb sweet potatoes

    skin on, scrubbed

  • garlic powder icon
    ½ tsp garlic powder
  • onion powder icon
    ½ tsp onion powder
  • smoked paprika icon
    1 tsp smoked paprika
  • ground cumin icon
    ¼ tsp ground cumin
  • ground coriander icon
    ¼ tsp ground coriander
  • cayenne pepper (optional) icon
    ¼ tsp cayenne pepper (optional)
  • kosher salt icon
    1 tsp kosher salt

    plus extra to serve

  • freshly ground black pepper icon
    ¼ tsp freshly ground black pepper
  • olive oil icon
    2 tbsp olive oil

For the lime aioli

  • mayonnaise icon
    ½ cup (3½ oz) mayonnaise
  • clove garlic icon
    ½ clove garlic

    minced

  • lime juice icon
    1 tbsp lime juice
  • grated lime zest icon
    Grated lime zest

    to serve

Instructions

  • 1Cut them into 2 to 3-inches long and 1-inch thick wedges.
  • 2Place the potatoes in a pot, cover with cold water, bring to a rolling boil and drain immediately. This removes excess starch.
  • 3Spread them onto paper towels and stand for 20 minutes to dry out and cool.
  • 4Meanwhile, whisk the mayonnaise, garlic and lime juice, cover and refrigerate.
  • 5The oven will preheat.
  • 6Meanwhile, combine the spices.
  • 7Toss the potatoes in the oil and add the spice mix. Place them in a single layer in the air fry basket, spaced apart for even air flow.
  • 8Once preheated, place the basket in rack position 3 and start the timer. Cook until golden.
  • 9The fries should be golden and crispy. If your fries aren't quite done press "A Bit More" .
  • 10Sprinkle the aioli with lime zest and the wedges with salt.
