Instructions

  • 1Cream the soft butter together with the sugar and add in the vanilla, baking soda, and the salt. Scrape down the bowl.
  • 2Mix well, and scrape down the bowl.
  • 3Mix in the flour and chocolate, and scrape down once more.
  • 4Using two spoons or a portion scoop, place six 50 g balls on a parchment-lined tray. Then, the tricky part: Leave them there for 30 minutes. This lets the gluten strands relax, and the flour hydrate, keeping the cookies tender and reducing spreading.
  • 5Place the rack on position 5 and get your oven heated up.
  • 6Load the cookie tray into the oven and bake for 10 minutes. Rotate halfway during baking for even browning. Allow to cool a few minutes before trying to remove them from the pan. Repeat as necessary. If you're using the same tray to bake a second set of cookies, allow it to cool before placing any dough on it.
  • 7If there are any to be a saved please store in an airtight, a cookie jar or something to keep them fresh and safe from any critters.
