Ingredients
Measurements:
Cooking spray
1½ cups (12 oz) mashed overripe bananas
plus 1 medium banana, extra
1 cup (7 oz) light brown sugar
3 large eggs
⅓ cup (2⅔ fl oz) grapeseed oil
⅓ cup (2⅔ fl oz) milk
½ tsp kosher salt
1¾ cups (9 oz) all-purpose flour
1 tbsp baking powder
2 tsp pure maple syrup
for brushing
Instructions
1Grease and line an 8½ x 4½ x 2½-inch deep loaf pan with parchment paper.
2Whisk the mashed banana, sugar, eggs, oil and milk.
3Add the salt. Sift the flour and baking powder over the banana mixture and stir.
4Slice the extra banana in half lengthways, peel and place cut-side-up on the batter. Brush the banana with the maple syrup.
5Insert the wire rack into position 7.
6Once preheated, place in the oven and start the timer. Cook until a skewer inserted into the center comes out clean.
7Stand in the pan for 10 minutes before turning onto a wire rack.
