  • mashed overripe banana icon
    1½ cups (12 oz) mashed overripe bananas

    plus 1 medium banana, extra

  • light brown sugar icon
    1 cup (7 oz) light brown sugar
  • large egg icon
    3 large eggs
  • grapeseed oil icon
    ⅓ cup (2⅔ fl oz) grapeseed oil
  • milk icon
    ⅓ cup (2⅔ fl oz) milk
  • kosher salt icon
    ½ tsp kosher salt
  • all-purpose flour icon
    1¾ cups (9 oz) all-purpose flour
  • baking powder icon
    1 tbsp baking powder
  • pure maple syrup icon
    2 tsp pure maple syrup

Instructions

  • 1Grease and line an 8½ x 4½ x 2½-inch deep loaf pan with parchment paper.
  • 2Whisk the mashed banana, sugar, eggs, oil and milk.
  • 3Add the salt. Sift the flour and baking powder over the banana mixture and stir.
  • 4Slice the extra banana in half lengthways, peel and place cut-side-up on the batter. Brush the banana with the maple syrup.
  • 5Insert the wire rack into position 7.
  • 6Once preheated, place in the oven and start the timer. Cook until a skewer inserted into the center comes out clean.
  • 7Stand in the pan for 10 minutes before turning onto a wire rack.
  • 8Slice and serve warm with butter.
