For the braising liquid

  • tangerine juice icon
    1 cup (8 fl oz) tangerine juice
  • orange marmalade icon
    1 cup (12 oz) orange marmalade
  • honey icon
    1 cup (12½ oz) honey
  • rice wine vinegar icon
    ½ cup (4 fl oz) rice wine vinegar
  • hoisin sauce icon
    ⅓ cup (2⅔ fl oz) hoisin sauce
  • soy sauce icon
    ¼ cup (2 fl oz) soy sauce
  • tomato paste icon
    3 tbsp (1½ oz) tomato paste
  • seedless tamarind pulp icon
    2 tbsp seedless tamarind pulp
  • yellow onion icon
    1 yellow onion

    coarsely chopped

  • clove garlic icon
    8 clove garlic
  • ginger icon
    1 oz ginger

    finely grated

  • red pepper flakes icon
    2 tsp red pepper flakes

For the ribs

  • baby back pork rib rack icon
    4½ lb baby back pork rib rack

For the glaze

  • honey icon
    3 tbsp (2½ oz) honey
  • dark brown sugar icon
    ⅓ cup (2 oz) dark brown sugar
  • Dijon mustard icon
    1 tbsp Dijon mustard
  • Worcestershire sauce icon
    1 tsp Worcestershire sauce

Instructions

  • 1Blend all the braising ingredients until smooth. Place the ribs in a 5 ½-quarts (10-inch) Dutch oven and pour over the braising liquid and cover.
  • 2Insert the wire rack in position 8.
  • 3Place the ribs in the oven and start the timer. Cook until tender.
  • 4For easy cleaning and to avoid burning, line the roasting pan with foil and place the broiling rack on top. Place half of the ribs on the rack.
  • 5Whisk together the honey, sugar, Dijon mustard, Worcestershire sauce and 2 tablespoons of the braising liquid.
  • 6Generously brush the ribs with some of the glaze.
  • 7Move the wire rack to position 4.
  • 8Place the ribs in the oven and start the timer.
  • 9Remove the ribs from the oven, brush with some more glaze and return to the oven.
  • 10Start the timer and broil for a further 3 minutes or until caramelized.
  • 11Place the ribs onto a serving platter, cover with foil and keep warm. Repeat with the remaining ribs.
  • 12Serve brushed with the remaining glaze.
