    centre cut

  • extra virgin olive oil icon
    ¼ cup (2 fl oz) extra virgin olive oil
  • kosher salt icon
    ½ tsp kosher salt
  • thyme leaves icon
    2 tsp thyme leaves
  • clove garlic icon
    3 cloves garlic plural

    thinly sliced

  • lemon icon
    1 lemon
  • freshly ground black pepper icon
    Freshly ground black pepper

Instructions

  • 1Insert the wire rack into position 6.
  • 2Place them in the roasting pan skin side down. Drizzle with the oil and sprinkle with the salt, thyme and garlic. Grate over the lemon zest and season with pepper.
  • 3Once preheated, place in the oven and start the timer. When the Rotate Remind signals, carefully turn the salmon over and continue cooking until translucent in the center and flakes easily with a fork. A very low temperature keeps the fish very tender and moist.
  • 4It is very gelatinous.
