1If you don’t have a mandolin, you can cut thin slices with a knife.
2Slice your onions with a knife, and your garlic with a mandolin. Add oil to a pan over medium high heat and sauté for 5 minutes while stirring, until you achieve an even browning of the onions.
3Fold a half sheet of parchment in half, and then in half again. Start from the center corner and fold to the edge. Measure your size to the pan you are using. Placing the point in the center of the pan, trimming a quarter inch of off the tip. Cut the paper at the edge of the pan. Unroll to a circle shape.
4Moving from the outside inward, tightly layer the zucchini all the way to the center. Sprinkle with thyme. Sing La Marseillaise if the mood strikes you.
5Get your oven hot!
6Place the pan in the oven and cook for 40 minutes. Maybe drink some wine now that you're finished cutting a million slices of zucchini.
7Pull the pan out of the oven and uncover. Let your masterpiece stand for 5 min, and then serve it up.
