Ingredients
Measurements:
1 cup (8 fl oz) milk
at room temperature
2 tsp instant dried yeast
2 oz unsalted butter
melted, plus extra 2 tbsp, melted, for brushing
1 large egg
1 large egg yolk
3 cups (1 lb) bread flour
plus extra, for dusting
2 tbsp sugar
1½ tsp kosher salt

Instructions
1Whisk the milk and yeast together and add the melted butter, egg and egg yolk.
2Place the flour, sugar and salt into the bowl of a bench mixer and mix on low speed with a dough hook. Add the milk mixture and knead on medium speed for 10 minutes or until the dough is smooth and elastic. This helps to develop the gluten in the flour for a better rise and texture.
3Turn the dough out onto a lightly floured countertop and shape into a ball. Place the dough in a heatproof bowl and cover with plastic wrap.
4Insert the wire rack into position 8.
5Place the dough in the oven and start the timer. Proof until the dough doubles in size.
6Spray a 13 x 9-inch baking dish with cooking spray.
Divide the dough into 12 equal pieces, about 2 ounces (65g) each. Roll each piece into a tight ball and place evenly spaced in the dish. Loosely cover with plastic wrap.
7Insert the wire rack into position 6.
8Place the dish in the oven and start the timer. Proof until the dough has risen.
9The oven will preheat.
10While the oven is preheating, remove the plastic wrap, brush the rolls with the melted butter.
11Once preheated, place the rolls in the oven and start the timer. Cook until golden brown.
