How to tamp and trim the dose


You’ve seen countless baristas tamp and trim espresso before making your coffee—and now you're able to do it yourself! Your Breville Dual Boiler™ is designed like a café-quality espresso machine, meaning that you can tamp and trim your ground beans to create a perfect dose. By mastering this skill, you’ll be one step closer to creating your own barista-quality third wave specialty coffee in your own kitchen. We illustrate how tamping subjects espresso to just the right pressure levels, allowing for an evenly distributed grind and better absorption. Tamp and trim espresso beans using your Breville Dual Boiler™ in 4 simple steps: 1) Put ground beans in your portafilter and tap to distribute. 2) Use your tamper tool to press the beans down. The metal top of the tamper should be level with the filter basket top. 3) Insert your razor trimming tool into the filter basket, so its shoulders rest on the rim. 4) While holding the portafilter on an angle, rotate the razor tool. This will trim off the excess, creating the perfect dose.
