Roasted beans require time for the complexity of their flavor to fully mature into balance. Yet if you wait too long, the beans will begin to oxidize, losing flavor and complexity in the process. We recommend selecting beans that have been roasted 5-30 days before. We also discuss bean origins and how to choose beans according to your personal preference. South American beans have low-acidity with a medium to heavy body, and are often served with milk. African beans generally produce a more delicate, acidic brew, and are often served without milk.
